 How to make dum biryani in home



Here is a recipe for making Dum Biryani, a classic Indian dish, at home:

Ingredients:


2 cups of basmati rice
1 lb of chicken, lamb or beef (or vegetables if you prefer)
1 onion, finely chopped
3 cloves of garlic, minced
1 inch piece of ginger, grated
2-3 tomatoes, finely chopped
2 cups of yogurt
2 tablespoons of biryani masala
1 teaspoon of turmeric powder
Salt and pepper, to taste
2 tablespoons of ghee or oil
1 cup of water
2 cups of mixed vegetables (carrots, peas, potatoes, etc.) (optional)
2 cups of soaked saffron (optional)
2 cups of fried onions (optional)
1/2 cup of chopped cilantro (optional)
1/2 cup of chopped mint (optional)
1/2 cup of chopped cashews (optional)
1/2 cup of chopped raisins (optional)
Instructions:

  • Soak the rice in water for 30 minutes and then drain the water.
  • In a pot or a deep pan, heat the ghee or oil and sauté the onions until they are golden brown.
  • Add the ginger and garlic, and sauté for another minute.
  • Add the meat or vegetables and fry until they are browned.
  • Add the tomatoes, biryani masala, turmeric, salt, and pepper and cook for another 5 minutes.
  • Add the yogurt and fry for another 5 minutes.
  • Add the mixed vegetables, saffron and fried onions, and sauté for 2 minutes.
  • Add the water and bring it to a boil.
  • Add the rice and stir gently.
  • over the pot and reduce the heat to the lowest setting.
  • Cook for 20 minutes or until the rice is fully cooked and the water has been absorbed.
  • Turn off the heat and let the biryani sit for another 10 minutes.
  • Garnish with cilantro, mint, cashews and raisins before serving.
Note: You can adjust the amount of spices and seasoning to your taste preference, and also you can add more vegetables or meat to the dish for more flavor.
